Sey Coffee
Sey is the quietest coffee shop in New York, and they want it that way. The room is one long white box with a concrete floor, a single shared table, and a bar staffed by people who would prefer to talk about filter coffee than make you a flat white. They steam milk reluctantly. The filter flight — three small glasses of single-origin coffee, no milk in sight — is the menu's mission statement. You will leave knowing more about coffee than when you arrived, whether you wanted to or not.
